Nay Nay’s Onion Dip

Hi everybody!

I hope you’re all doing well since my last post. (I know, it’s been too long…sorry!) My family & I are doing well. I’ve been enjoying the fact that this winter has been pretty mild. But, I’m still counting down til Spring gets here! (ALWAYS DO!) Only 5 weeks from Sunday, we go back to Daylight Savings Time…and 6 weeks from Sunday is when Spring “officially” arrives! Then, I can do my happy dance! 🙂

Speaking of Sunday, that’s when the Super Bowl takes place (February 7th). I’m not into football but soooo many folks are! And, since there are LOTS of Super Bowl parties and get-togethers, I wanted to share a recipe for some seriously ADDICTING onion dip I made recently. I’m sure you’ll love it too!

It’s easily doubled, tripled…or quadrupled…for your party or event.

Whatever team you’re rooting for, I hope y’all have a blast at your Super Bowl party. Eat, drink (responsibly, of course), and be merry! 😉

Happy cooking!

~Renee

Nay Nay’s Onion Dip

1 Tbls Olive Oil (or veg. oil)

1 Medium Onion, chopped (about 1 1/2 cups)

1 Cup Sour Cream

1/4-1/2 Cup Mayonnaise*

1/2 tsp Granulated Garlic**

1/4 tsp Salt

Cook chopped onion on med high, stirring occasionally, til tender and starting to brown (caramelize); set aside.

While onion is cooling, put all other ingredients into a medium bowl.

Add caramelized onion. Mix thoroughly. Store in refrigerator til ready to serve.

This dip is even better after the flavors have mingled together. It can be made ahead.

*Depending on what mayonnaise I’m using, I sometimes only use 1/4 cup. Use your taste buds as a guide. 😉

**Garlic powder can be used instead, if desired.
